When someone is asked to name a hot sauce, Tabasco sauce is what immediately comes to mind…and for good reason! There are so many people who don’t know that there are 1000s of different hot sauces. Possibly only the real chili-heads know about all the different hot sauces and all the many varieties of hot peppers. While Tabasco sauce has evolved into several flavors like Chipotle, Buffalo, Sweet and Spicy, and Garlic Pepper style, these are likely vogue sauces that may not stick around indefinitely. Tabasco sauce is made from the Jalapeno Pepper with a mid-range heat from 30K to 50K on the scale of heat measurements.
Next, one might think of Pepperoncini peppers, you know the ones that seem to always hang around the salad bar! These are mild peppers and normally not used to make hot sauces; their units in heat lie between 100 and 1K.
There are also Habanero peppers which are a very common variety for hot sauces one of the most intensely spicy species of chili peppers with 200K to 300K heat units.
When trying to set the record on heat, the red Savina peppers are those with real fire at a range of 350K and up to 577K units. There are even some named brand hot sauces that hit the two million mark on the heat meter. A laboratory test measured a Trinidad pepper sauce at 1,463,700 heat units. Now that’s some serious fiery flavor.
The ingredient in hot peppers that gives them the hot flavor is called capsaicin. Amazingly even though the heat can be so intense as to cause heavy perspiration, watering eyes and even a loss of breath, the heat will not cause tissue damage as in actual burns. The burn is really a chemical reaction with the neurological system and so it is a ‘perceived heat.’ So the more the capsaicin ingredient is diluted with other ingredients the less hot the actual sauce will taste.
Research has indicated there are medicinal benefits to eating pepper sauces such as improved digestion, may help heal ulcers, relieves pain, clears the sinuses, helps battle depression, lowers triglycerides, lowers blood pressure, effective topical ointment pain reliever for arthritis and joint pain and even has the ability to end a heart attack in progress. Whether all these are true may be up to the person since everyone is different anatomically.
The Datil (not everyone is familiar) is another very hot pepper, heat ranges from 100K to 300K units. These are similar to habaneros but with a sweeter, fruitier flavor. We’ve heard them described as the most unique and flavorful hot pepper anywhere. The flavor is very fruity with notes of lime, vanilla, and flowers. Hot for sure, but loaded with flavor, this little golden makes salsa taste totally unique. Datil peppers are indigenous to St. Augustine, Florida, where they have been grown for roughly two-hundred and thirty years.
